Sweet wines are made by concentrating the juice inside the grapes before extraction via botrytis (a type of rot), drying, prematurely stopping the fermentation process or fortification. Styles range from the elegant and drinkable styles of Sauternes to the stickie sweet spanish wines made from the Pedro Ximenez grape. Usually enjoyed after a meal, sweet wines are an interesting and usually very high quality product whose prices reflect the amount of grapes that need to be used to make the wine - sweet wines take more grapes per bottle to produce, sometimes much more.
