The classic grape of red Burgundy: thin-skinned, difficult to grow and notoriously temperamental. When perfectly made there is no other grape that demands as much respect or brings such lavish praise. The very best wines come from the Cote D’or in Burgundy and have unbelievably heady, intoxicating perfumes, wild and pronounced sweet fruit flavour and an array of feral secondary characteristics. It takes well to oak and is the best red grape variety at communicating its terroir as it drinks. The richly flavoured and well-structured constituent of Champagne.
