Wineaux's notes Notes from the producer

The very best selection of the estate's Sauvignon Blanc fruit goes into this Piedmont white and it then spends some time in barrels in contact with its yeasts as the fermentation occurs. The result? A truly gorgeous Sauvignon Blanc, rich and textured but with sublime balance and freshness. The concentration of the melon and grapefruit is impressive and the time it's had in contact with its yeasts gives the wine a seductive quality and lovely creamy elegance. As you'd expect it finishes long and with great aromatics.
Technical info
100% Sauvignon Blanc
Made from white Sauvignon grapes (15 years old), located in the village of Castiglione Falletto and Monforte d’Alba. This is a wine for ageing, we would recommend drinking it from 2yrs old and it will gain complexity for another 5.
Vinification: after a light pressing, the wine is left in small barrels, where alcoholic and malolactic fermentation takes place in contact with its yeasts.
Fining: in bottle for 18 months at controlled temperature of 15° C.
Colour: bright, deep straw yellow.
Shelf life temperature: 13°-15° C.
Serving temperature: 12-14° C.
Serving suggestions: fish dishes, lobster, salmon, shellfish and cheeses.
Bottle size: L. 0.750
