Merlot Merlot is one of the key ingredients in most Bordeaux wines and takes the lead role in the great wines of St Emilion and Pomerol which produce some of the best wines in the world. Most of the rest of the wine-producing world has taken to this grape and good examples are made everywhere, taking full advantage of Merlot’s gorgeous plum flavour, soft and supple tannins and luscious consistency. Merlot is earlier ripening and thinner skinned than it’s Bordeaux partner Cabernet Sauvignon, a partnership most agree is among the best in the wine world.
