The third key grape variety in Bordeaux's holy trinity, this is quite an underrated grape. It provides the backbone, structure and perfume to many great St. Emilions, Pomerols and the reds of the Loire Valley. The very top examples of this grape are on a par with the best red wines in the world and have the most alluring green pepper character - a herbaceous, perfumed and potentially very elegant grape.
       
Primary fruit character: grassy, raspberry fruit
Secondary flavour character: green bell peppers, lead pencil shavings, herbs and dried flowers
